Ingredients For Dhokla Batter: Gram flour -1 1/2 cup (Buy: Salt - 1/2 tsp (Buy: ) Sugar- 1/2 tsp (Buy: ) Turmeric powder- 1/2 tsp (Buy: ), Chilies, & Eno

For Dhokla syrup: Oil - 1 tsp (Buy: ) Mustard seeds- 1/2 tsp (Buy: ) Green chilies – 5 nos. (slit) Curry Leaves Water - 1/2 cup Salt - 1/2 tsp, Sugar - 2 tsp, Coriander leaves (chopped) & Juice of 1/2 lemon

Cooking Method:

In a bowl, add the Pro Nature’s Organic Gram flour, Pro Nature Organic Brown Sugar, salt & Po Nature Organic turmeric powder. Mix everything well. Add water and mix well again. The consistency of the batter should not be very thick. Rest the batter for about 10 mins. Grease a cake tin with some oil. Just before pouring the batter into the cake tin, add 5gms of Eno and mix it gently. Pour the batter immediately into the cake tin and make sure not to pat it or even the surface out. Heat a pot with some water, placing a stand inside it. Let it come to boil and then slowly place the cake tin on the stand. Close it with a lid and let the dhokla steam cook itself for about 0 minutes under medium to low flame. Once you open the lid, use a toothpick or a fork to prick the dhokla and see if it comes out clean. That’s your cue to remove it and keep it aside to cool it down to room temperature. For the syrup, take a pan with Pro Nature’s Organic Sunflower Oil. Once heated, add, add Pro Nature’s Organic Mustard seed, chillies and curry leaves. After a few minutes, pour water, add salt and sugar and then mix. Bring it to a boil and switch off the stove. Add lemon juice, coriander leaves and stir well. Check the dhokla and let it cool down to room temperature. Take the dhokla from the cake tin and cut it into squares. Pour the tempered ingredients onto the dhokla and let is seep through. Finally, garnish it with grated coconut and coriander leaves. The dhokla is ready to be served! Bon Appetit!

Note: The trick lies in not whisking the batter too much after adding Eno. Mix gently but not for long.
